The entire ground floor will be opened up, and a long oval bar will be moved to its original location. The kitchen and dining areas will also be expanded to serve up more food when you need it most (after a couple of cold ones).
Prince Public Bar will be open for breakfast, lunch, and dinner, with a menu designed by Executive Chef Dan Hawkins, and Head Chef Dan Cooper which will feature “pub fare without the frills”.
The renovation follows some big shifts in St Kilda over the past 12-months, with the reopening of The Espy, The Gatwick being renovated, and the former Oslo soon to be up for sale on The Block.
“This is a really significant moment, not just for The Prince Hotel, but for the entire suburb of St Kilda, which has undergone its own transformation in recent years. The Prince Hotel has established itself as a proud mainstay of St Kilda’s landscape for generations, and the transformation invites a new wave of St Kilda locals to discover this iconic venue.
We’re bringing back the quintessential St Kilda local, providing a place where people can return two, three times a week and bring their family or a first date. It’s a place where everyone is welcome, just as it always has been, and we’re excited to see how Melbourne responds to it,” said The Prince Hotel Managing Director, Andrew Ryan.
In February the venue will also add Little Prince Wine, a wine bar specialising in boutique and premium wines where you can purchase for takeaway, or taste them on-site. An in-store deli will also have pre-prepared meals ready to go.
Prince Public Bar will reopen to thirsty Melburnians in early December 2019.
